Ingredients
For the Marinade:
1/4cup olive oil
3tbsp fresh lemon juice
2tsp lemon zest
2cloves garlic, minced
1tbsp fresh chopped rosemary or thyme
1tsp sea salt
1/2tsp black pepper
For the Skewers:
1lbs 1.5 boneless, skinless chicken breast, cut into 1.5-inch cubes
1red bell pepper, chopped
1yellow bell pepper, chopped
1small zucchini, sliced
1small red onion, quartered
Optional: cherry tomatoes or mushrooms
8 Bamboo or metal skewers (if bamboo, soak 30 mins)

Marinate the chicken: In a bowl or zip-top bag, combine all marinade ingredients. Add chicken and toss to coat. Marinate in the fridge for 30–60 minutes.
