  • For the Bruschetta Topping
  • 1 ripe avocado (diced)
  • 1/2 Cup cherry tomatoes (diced)
  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 tbsp fresh basil, finely chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional for heat)
  • For the Balsamic Glaze
  • 1/4 Cup balsamic vinegar (check for low-carb options)
  • 1/2 tsp monk fruit or erythritol sweetener (or other sweetener)
Instructions
  1. Prepare the Keto & Gluten Free Crackers as Directed Recipe & Instructions Here
  2. In a small saucepan over medium heat, add balsamic vinegar and sweetener.
  3. Simmer for 5-7 minutes, stirring occasionally, until thickened.
  4. Remove from heat and let cool.
  5. In a bowl, gently mix avocado, cherry tomatoes, olive oil, lemon juice, basil, salt, pepper, and red pepper flakes.
  6. Stir lightly to keep the avocado chunks intact.
  7. Spoon the avocado bruschetta mixture onto the keto crackers, chaffle slices, or cheese rounds.
  8. Drizzle with the keto balsamic glaze.
  9. Garnish with extra fresh basil and cracked black pepper.
