Ingredients

1 baguette or gluten-free artisan loaf, sliced into 12 pieces
1 tbsp olive oil
1 cup whole milk ricotta cheese
1/2 tsp lemon zest (optional, brightens the ricotta)
3/4 cup cherry tomatoes, finely diced
1/2 cup fresh blueberries
6 fresh 6–8 basil leaves, finely chopped
Sea salt and freshly ground black pepper, to taste
Optional: drizzle of balsamic glaze for added depth

Toast the Bread: Preheat oven to 400°F (200°C). Lightly brush baguette slices with olive oil and place on a baking sheet. Toast for 7–10 minutes until golden and crisp.
