Ingredients

  • 3 –4 lb bison chuck roast
  • 2 tbsp avocado oil
  • 2 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 large yellow onion sliced
  • 4 carrots cut into large pieces
  • 3 celery stalks cut into large pieces
  • lbs baby potatoes or Yukon Gold potatoes halved
  • 4 cloves garlic smashed
  • 2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 tbsp chopped fresh parsley for garnish

Instructions

Season the Roast

  • Pat the bison roast dry with paper towels.
  • Combine the salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary.
  • Rub the seasoning evenly over the roast.

Sear

  • Heat avocado oil in a large Dutch oven over medium-high heat.
  • Sear the roast for 3–4 minutes per side until well browned.
  • Remove and set aside.

Build the Pot

  • Add onions, carrots, celery, potatoes, and garlic to the Dutch oven.
  • Stir in the tomato paste.
  • Pour in the beef broth and Worcestershire sauce.
  • Add the bay leaves.
  • Return the roast to the pot.

Cook

  • Oven Method
  • Cover tightly and bake at 300°F (150°C) for 3½–4 hours, or until the meat is fork tender.
  • Slow Cooker Method
  • Cook on Low for 8–9 hours or High for 5–6 hours.

Serve

  • Remove the bay leaves.
  • Slice or shred the roast.
  • Spoon vegetables and broth over the meat.
  • Garnish with fresh parsley.
