Bison Stew

Tender chunks of bison are slowly simmered with hearty vegetables, aromatic herbs, and a savory broth to create a rich, comforting stew. Naturally flavorful and satisfying, this rustic meal is perfect for cool evenings and is even better the next day as the flavors continue to develop.

Ingredients

  • lbs bison stew meat cut into 1½-inch cubes
  • 2 tbsp avocado oil
  • 2 tbsp all-purpose flour
  • tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 large yellow onion diced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • lbs Yukon Gold potatoes cubed
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 4 cups low-sodium beef broth
  • 1 cup diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tbsp chopped fresh parsley

Instructions

  • Season the Meat
  • Pat the bison dry.
  • Combine flour, salt, pepper, garlic powder, and smoked paprika.
  • Toss the bison until evenly coated.
  • Brown the Bison
  • Heat avocado oil in a large Dutch oven over medium-high heat.
  • Brown the meat in batches for 2–3 minutes per side.
  • Transfer to a plate.
  • Sauté the Vegetables
  • Add the onion, carrots, celery, and mushrooms.
  • Cook for about 6 minutes until softened.
  • Stir in the garlic and cook for another minute.
  • Build the Stew
  • Return the browned bison to the pot.
  • Add the potatoes, broth, diced tomatoes, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
  • Stir well.
  • Simmer
  • Bring to a gentle boil.
  • Reduce heat to low.
  • Cover and simmer for 2½–3 hours, stirring occasionally, until the bison is fork tender.
  • Finish
  • Stir in the peas during the final 5 minutes of cooking.
  • Remove the bay leaves.
  • Taste and adjust seasoning.
  • Garnish with fresh parsley before serving.
