Ingredients

Tomato & Basil Bruschetta

  • 2 cups Roma tomatoes diced
  • ¼ cup fresh basil chiffonade
  • 1 clove garlic minced
  • 1 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • ¼ tsp sea salt
  • tsp freshly ground black pepper

Garlic Mushroom Bruschetta

  • 8 oz cremini mushrooms finely diced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 2 tbsp grated Parmesan optional

Olive Tapenade Bruschetta

  • 1 cup Kalamata olives pitted
  • ¼ cup green olives pitted
  • 1 tbsp capers drained
  • 1 small garlic clove
  • 2 tbsp parsley
  • 1 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Freshly ground black pepper to taste

Instructions

Tomato & Basil Bruschetta

  • Combine tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper.
  • Let stand 10–15 minutes to allow the flavors to develop.
  • Spoon onto six toasted baguette slices immediately before serving.

Garlic Mushroom Bruschetta

  • Heat butter and olive oil in a skillet over medium-high heat.
  • Sauté mushrooms until their moisture evaporates and they become lightly browned (6–8 minutes).
  • Add garlic and thyme; cook 1 minute.
  • Stir in parsley and season with salt and pepper.
  • Spoon onto six toasted baguette slices.
  • Sprinkle with Parmesan if desired.

Olive Tapenade Bruschetta

  • Pulse olives, capers, garlic, parsley, and lemon juice in a food processor.
  • While pulsing, drizzle in olive oil until a coarse spread forms.
  • Season with black pepper.
  • Spread onto six toasted baguette slices.

Toasting the Bread

  • Preheat oven to 400°F (205°C).
  • Arrange baguette slices on a baking sheet.
  • Brush both sides lightly with olive oil.
  • Bake 5–7 minutes, turning once, until golden.
  • Rub the warm toast with the cut side of the garlic clove for extra flavor.
