Prep the Oven & Pan
Preheat oven to 275°F (135°C).
Lightly oil a large baking dish or cast iron pan.
Season the Pork
Pat pork slices dry with paper towels.
Mix salt, pepper, garlic powder, onion powder, smoked paprika, and thyme/rosemary in a small bowl.
Rub seasoning mixture evenly onto all sides of each pork slice.
Assemble the Dish
Lay seasoned pork slices flat in a single layer in the dish.
Drizzle with olive oil.
Pour ½ cup broth into the bottom of the pan if using (adds moisture and prevents sticking).
Slow-Bake Covered
Cover tightly with foil or lid.
Bake in the center of the oven for 4.5 to 5.5 hours, depending on thickness.
The pork should be fork-tender but still hold its shape.
Uncover & Finish
Remove foil. Increase heat to 350°F (175°C).
Return pork to oven for 25–30 minutes to brown and slightly crisp the tops.
Optional: Broil briefly for a more roasted finish.
Rest & Serve
Let rest for 10 minutes, loosely covered with foil.
Serve with spooned pan juices and your favorite sides: mashed potatoes, roasted vegetables, cauliflower mash, or rice.
