Ingredients

  • 3 cups coconut water
  • 1 ½ cups fresh strawberries hulled
  • 3 –4 tbsp allulose or maple syrup adjust to taste
  • 1 tbsp fresh lime juice
  • ½ tsp lime zest
  • Pinch sea salt
  • Optional garnish:
  • fresh mint leaves
  • sliced strawberries
  • edible flowers

Instructions

  • Blend the Base
  • In a blender combine:
  • coconut water
  • strawberries
  • sweetener
  • lime juice
  • lime zest
  • pinch of salt
  • Blend until smooth.
  • Strain (Optional)
  • For a smoother texture, strain the mixture through a fine mesh sieve to remove seeds.
  • Freeze
  • Pour mixture into a shallow baking dish.
  • Place in the freezer.
  • Scrape Crystals
  • After 45 minutes, scrape the mixture with a fork to break up the ice.
  • Repeat every 30–40 minutes for about 3 hours until fluffy ice crystals form.
  • Serve
  • Spoon granita into chilled glasses or bowls.
  • Garnish with:
  • fresh mint
  • strawberry slices
  • edible flowers for a spring presentation.
