Chef’s Tips

  • Keep the butter cold. Cold butter helps make the scones soft, flaky, and tender.
  • Don’t overmix the dough. Stir only until everything comes together. Too much mixing can make the scones tough.
  • Let kids use their hands. Rubbing the butter into the flour is an easy and fun job for young bakers.
  • A little flour helps with sticky dough. Lightly flour hands and the counter rather than adding lots of extra flour to the dough.
  • Make them your own. Add about ½ cup chocolate chips, blueberries, raisins, or dried cranberries.
  • For prettier tops, brush the scones with a little milk before baking and sprinkle with sugar.
  • For extra-tall scones, chill the shaped scones for 10–15 minutes before baking.
  • Watch the last few minutes closely. They're ready when the tops are lightly golden and the bottoms have begun to brown.
