2cupsall-purpose flour250 g
2tspbaking powder
1tspsea salt
1tbspgranulated sugaroptional, for improved browning
¾cupwarm whole milk180 ml
2tbspmelted butter
Oil of choice for frying (about 2-3 cups)avocado oil, or lard
Instructions
Combine Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, salt, and optional sugar.
Add Wet Ingredients
Stir in the warm milk and melted butter until a shaggy dough forms.
Knead
Turn onto a lightly floured surface and knead for 3–5 minutes, until smooth.
Rest
Cover the dough with a towel and let rest for 30 minutes.
Heat Oil
Heat 2–3 inches of oil to 350°F (177°C).
Shape
Divide dough into 8 equal pieces.
Flatten each into a circle about 6 inches across and ¼-inch thick.
Stretch the center slightly thinner and poke a small hole in the middle.
Fry
Carefully place one dough round into the hot oil.
Cook 2–3 minutes until golden brown.
Flip and fry another 1½–2 minutes.
Drain on paper towels or a wire rack.
Repeat with remaining dough.
