Ingredients

  • 2 large sweet potatoes, diced into 1-inch cubes leave skin on if organic
  • 1 tbsp extra virgin olive oil or avocado oil
  • 1 tsp ground turmeric
  • 1 tbsp fresh rosemary, finely chopped or 1 tsp dried
  • 1/2 tsp sea salt
  • Cracked black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne for heat

Instructions

  • Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  • Toss potatoes in a large bowl with olive oil, turmeric, rosemary, salt, pepper, and any optional spices.
  • Spread evenly on the prepared baking sheet, avoiding overlap.
  • Roast for 30–35 minutes, flipping once halfway, until golden and crispy at the edges.
  • Serve warm and garnish with fresh herbs if desired.
