Instructions
Prepare the dough
Combine the whole-wheat flour, almond flour, yeast, salt, and cream of tartar. Add the warm water and olive oil and mix until a soft dough forms.
Knead
Knead for approximately 3–4 minutes. Because almond flour contains no gluten, the dough will be somewhat softer and more delicate than conventional pizza dough.
Rise
Cover and allow to rest in a warm location for 30–45 minutes. It may not double in volume, but it should become slightly lighter and more relaxed.
Preheat
Heat the oven to 425°F with a baking sheet, pizza stone, or steel inside.
Shape
Roll or press the dough between sheets of parchment into an approximately 10 × 12-inch oval or rectangle.
Pre-bake
Transfer the dough and parchment to the hot baking surface. Bake for 6–7 minutes, just until the surface begins to set.
Add toppings
Spread the ricotta over the crust, leaving a narrow border. Add the goat cheese and sliced figs.
Finish baking
Return to the oven for approximately 6–9 minutes, until the edges are golden and the cheese is warm.
Finish
Drizzle the baked flatbread with honey. Sprinkle with thyme, walnuts if using, a small pinch of sea salt, and freshly ground black pepper.

High Power Lower-Sugar Option
Fresh figs and honey both contribute naturally occurring sugars, so I would keep the honey deliberately restrained rather than making the flatbread excessively sweet.For a lower-sugar version, use 2 teaspoons honey instead of 1 tablespoon. Alternatively, combine 1 teaspoon honey with a small amount of allulose-based syrup to retain some genuine honey flavor while reducing the amount of honey used.Do not replace the figs. They are central to the identity and flavor of a Honey & Fig Flatbread.
Formulation Notes
Cream of tartar: Optional. At ½ teaspoon it contributes mild acidity, but this yeast-raised flatbread does not require it for leavening. It can be omitted for a simpler formulation.Baking soda: Not needed. Adding baking soda alongside yeast would provide little benefit here and could adversely affect flavor if improperly balanced.Gums: Not necessary. The wheat flour supplies gluten structure, while the almond flour contributes tenderness.Bake temperature:425°F conventional bake is preferable to a moisture bake.
