Step 1: Prepare Juniper
Grind dried culinary-grade juniper berries (Juniperus communis) into a fine powder using a spice grinder or mortar.
Measure out ¾ tsp. Store any excess in a sealed jar.
Step 2: Make Dough
In a medium bowl, combine almond flour, protein powder, erythritol, baking powder, xanthan gum, salt, and juniper powder.
In a separate bowl, cream softened butter with orange zest and vanilla.
Mix wet into dry until a cohesive dough forms. Chill 10–15 minutes if soft.
Scoop using a #30 scoop (~30 g), roll into balls, and gently flatten tops.
Step 3: Bake
Preheat commercial convection oven to 315°F (adjusted from 325°F standard).
Line baking tray with parchment.
Bake 12–14 minutes or until lightly golden at edges.
Cool on tray for 10 minutes, then transfer to rack.
Step 4: Ice (Optional)
Prepare Golden Dolci Vanilla Cookie Icing.
Drizzle or frost once cookies are fully cooled.
Optionally top with micro-planed orange zest or edible snow (erythritol dusting).
