Ingredients

  • Cookie Dough
  • cups blanched almond flour 144 g
  • ¼ cup Levels vanilla whey protein powder 30 g
  • cup butter unsalted, softened (76 g)
  • 3 tbsp Swerve® Confectioners erythritol 24 g
  • ½ tsp baking powder
  • ¼ tsp xanthan gum optional, for better structure
  • 1 tsp finely grated orange zest ≈ 1 medium orange
  • ¾ tsp ground juniper berries Juniperus communis, food-grade only
  • 1 tsp vanilla extract
  • tsp fine sea salt
  • Optional Icing Golden Dolci Vanilla Cookie Icing
  • 1 cup Swerve® Confectioners 96 g
  • 3 tbsp unsalted butter melted (42 g)
  • 2 –3 tbsp warm water 30–45 g
  • ½ tsp guar gum
  • 1 tsp vanilla extract
  • Pinch sea salt

Instructions

  • Step 1: Prepare Juniper
  • Grind dried culinary-grade juniper berries (Juniperus communis) into a fine powder using a spice grinder or mortar.
  • Measure out ¾ tsp. Store any excess in a sealed jar.
  • Step 2: Make Dough
  • In a medium bowl, combine almond flour, protein powder, erythritol, baking powder, xanthan gum, salt, and juniper powder.
  • In a separate bowl, cream softened butter with orange zest and vanilla.
  • Mix wet into dry until a cohesive dough forms. Chill 10–15 minutes if soft.
  • Scoop using a #30 scoop (~30 g), roll into balls, and gently flatten tops.
  • Step 3: Bake
  • Preheat commercial convection oven to 315°F (adjusted from 325°F standard).
  • Line baking tray with parchment.
  • Bake 12–14 minutes or until lightly golden at edges.
  • Cool on tray for 10 minutes, then transfer to rack.
  • Step 4: Ice (Optional)
  • Prepare Golden Dolci Vanilla Cookie Icing.
  • Drizzle or frost once cookies are fully cooled.
  • Optionally top with micro-planed orange zest or edible snow (erythritol dusting).
