Instructions
Hydrate Tomato Base
In a saucepan, whisk together tomato paste and water until smooth over low-medium heat.
Emulsify & Season
Stir in oil, vinegar, sweetener, and all spices/herbs. Simmer gently for 10 minutes.
Thicken (Optional)
If using xanthan gum, sprinkle it in very gradually, whisking constantly to avoid clumps. Simmer an additional 5–10 minutes until smooth and slightly thickened.
Cool & Portion
Let sauce cool. Portion into airtight containers or silicone trays for freezing.
Use or Freeze
Store in the fridge up to 7 days or freeze for up to 3 months. Thaw overnight before using.
