1️⃣ Make Mango Purée
Peel and cube mangoes.
Blend until completely smooth.
Stir in lime juice, zest, sugar, and pinch salt.
Taste and adjust sweetness if needed.
2️⃣ Whip Cream
In a chilled bowl, whip heavy cream and vanilla until soft peaks form.
3️⃣ Fold
Gently fold coconut cream into whipped cream.
Then fold mango purée into mixture in two additions.
Do not overmix — keep it airy.
4️⃣ Chill
Spoon into serving glasses.
Refrigerate 2–3 hours until set and chilled.
5️⃣ Garnish
Top with mango cubes, toasted coconut, and mint before serving.
