Ingredients

  • 1 baguette or gluten-free artisan loaf, sliced into 12 pieces
  • 1 tbsp olive oil
  • 1 cup whole milk ricotta cheese
  • 1/2 tsp lemon zest optional, to brighten the ricotta
  • 3/4 cup cherry tomatoes, finely diced
  • 1/2 cup fresh blueberries
  • 6 fresh 6–8 basil leaves, finely chopped
  • Sea salt and freshly ground black pepper, to taste
  • Optional: drizzle of balsamic glaze for added depth

Instructions

  • Toast the Bread: Preheat oven to 400°F (200°C). Lightly brush baguette slices with olive oil and place on a baking sheet. Toast for 7–10 minutes until golden and crisp.
  • Whip the Ricotta: In a bowl, stir together ricotta with lemon zest, a pinch of salt, and black pepper until light and fluffy.
  • Assemble the Bruschetta: Spread a generous layer of ricotta on each slice. Top with a spoonful of diced tomatoes and 2–3 blueberries.
  • Finish with Herbs & Garnish: Sprinkle with chopped basil and, if desired, a light drizzle of balsamic glaze.
  • Serve Immediately: Best served slightly warm or room temp to enhance flavor and texture.
