Preheat oven to 300°F (150°C).
Lightly grease a large baking dish or Dutch oven.
Layer Aromatics
Spread sliced onion and crushed garlic evenly in the base of the dish.
These will act as a flavor base and help prevent sticking.
Season & Arrange Pork
Pat pork slices dry with paper towels.
Season both sides liberally with salt, pepper, and Italian seasoning.
Arrange pork on top of onion and garlic layer.
Add Liquids
Pour 1 cup broth and 2 tbsp Worcestershire gently around the pork.
Add bay leaf, if using.
Do not pour directly over meat — keep seasoning intact.
Cover & Braise
Cover dish tightly with foil or a lid.
Bake in the center of the oven for 4 to 4.5 hours, or until meat is fork-tender.
Optional Browning
Remove foil. Preheat broiler to high.
Broil 3–5 minutes to crisp and brown the top edges of pork.
Watch closely to avoid burning.
Serve
Let rest 5 minutes before serving.
Spoon pan juices and softened onions over pork.
Serve with mashed potatoes, rice, roasted vegetables, or low-carb sides.
