Ingredients

For the Salad:

  • 6 cups spring greens or baby spinach
  • 1 cup fresh strawberries, hulled and sliced
  • 1/3 cup walnuts, toasted
  • 1/4 small red onion, thinly sliced
  • 1/4 Optional: cup crumbled goat cheese or feta

For the Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Pinch of sea salt and freshly ground pepper

Instructions

  • Make the dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon, honey, salt, and pepper until emulsified.
  • Assemble the salad: In a large salad bowl, combine greens, strawberries, walnuts, and red onion. Toss gently to combine.
  • Dress and serve: Drizzle dressing just before serving and toss lightly to coat. Garnish with crumbled cheese if using.
