  • Vanilla Chia Layer
  • 2 cups unsweetened coconut milk (or almond milk)
  • ½ cup chia seeds
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract (or ½ vanilla bean scraped)
  • Pinch sea salt
  • Fruit Layer
  • 1 cup strawberries, sliced
  • ½ cup blueberries
  • 1 orange, segmented
  • 1 kiwi, sliced

  • Let sit 5 minutes, whisk again to prevent clumping.
  • Cover and refrigerate at least 4 hours or overnight until thickened.

  • Layer with mixed fruit.
