Description

This keto-friendly, gluten-free angel food cake is a light and airy dessert that perfectly balances indulgence and healthy eating. Made without refined sugar or traditional flour, it uses low-carb, gluten-free ingredients to deliver the classic fluffy texture and subtle sweetness angel food cakes are known for.

Ingredients
  • 3/4 Cup powdered egg whites
  • 1 1/2 Cups powdered erythritol
  • 1 tsp cream of tartar
  • 1/2 tsp xanthan gum
  • 1/4-1/2 tsp salt
  • 2 1/4 Cups warm water
  • 1 Cup Quest® plain multi-purpose mix protein powder
  • Dash Lemon, vanilla, and almond extracts
Instructions
  1. Adjust the oven rack to the lower-middle position and preheat the oven to 325℉.
  2. In a bowl, mix together the protein powder, salt, and xanthan gum.
  3. In a standing mixer, combine the powdered egg whites with warm water and begin mixing on medium-low speed. Add the cream of tartar, powdered erythritol, and flavorings.
  4. Beat the mixture in the mixer on high speed until fluffy-stiff peaks form.
  5. Gently fold in the protein powder mixture in three additions.
  6. Pour the batter into an ungreased angel food cake (or tube) pan.
  7. Bake for 35-45 minutes or until the top is golden brown.
  8. Remove from the oven and invert the pan upside down on a wire rack to cool for about three hours.
  9. Once the cake has cooled, run a thin knife around the edges to release the cake. Slice with a serrated knife and serve topped with whipped cream and fresh berries, if desired.
