Adjust the oven rack to the lower-middle position and preheat the oven to 325℉.

In a bowl, mix together the protein powder, salt, and xanthan gum.

In a standing mixer, combine the powdered egg whites with warm water and begin mixing on medium-low speed. Add the cream of tartar, powdered erythritol, and flavorings.

Beat the mixture in the mixer on high speed until fluffy-stiff peaks form.

Gently fold in the protein powder mixture in three additions.

Pour the batter into an ungreased angel food cake (or tube) pan.

Bake for 35-45 minutes or until the top is golden brown.

Remove from the oven and invert the pan upside down on a wire rack to cool for about three hours.
