Preheat Oven
Preheat the oven to 350°F.
Combine Dry Ingredients
In a large mixing bowl, combine all dry ingredients except for the gelatin.
Bloom the gelatin
Bloom the gelatin by mixing it with the cold water, then add the butter (no need to soften) and microwave until melted.
Add in:
Once melted, add the gelatin mixture to the dry ingredients.
Add the egg and almond extract to the dry ingredients.
Mix
Mix all ingredients together until well combined. It is best to use a stand-up electric mixer fitted with a flat edge beater.
Prepare your surface
Place a sheet of parchment paper on your work surface.
Roll out the dough
Place a ball of dough on the parchment (coat in almond flour if needed), cover with another sheet of parchment, and roll out the dough about 1/4 -1/2" thick.
Cut out the cookies
Cut out the cookies and transfer them to a lined baking sheet.
Bake
Bake at 350°F for approximately 10 minutes.
