These traditional Swedish saffron buns are reimagined in Golden Dolci style using wholesome, lower-carbohydrate ingredients while preserving their signature golden color, soft texture, and delicate saffron aroma. These buns are lightly sweetened, enriched with butter, and traditionally decorated with raisins.

Ingredients

  • Dry
  • 180 g fine almond flour
  • 60 g bamboo flour
  • 50 g vanilla whey protein isolate
  • 30 g oat fiber
  • 15 g psyllium husk powder
  • 6 g xanthan gum
  • 8 g baking powder
  • ½ tsp sea salt
  • Wet
  • 240 g whole milk warmed (or unsweetened coconut milk)
  • 60 g unsalted butter melted
  • 2 large eggs
  • 70 g allulose
  • 1 tsp vanilla extract
  • Saffron Mixture
  • ½ tsp saffron threads
  • 1 tbsp warm milk
  • ½ tsp vanilla
  • Garnish
  • 24 raisins
  • 1 beaten egg for egg wash

Instructions

  • Bloom the Saffron
  • Crush the saffron threads.
  • Combine with:
  • warm milk
  • vanilla
  • Allow to steep 10–15 minutes.
  • Mix Dry Ingredients
  • Whisk together:
  • almond flour
  • bamboo flour
  • whey protein
  • oat fiber
  • psyllium
  • xanthan
  • baking powder
  • salt
  • Mix Wet Ingredients
  • Whisk together:
  • warm milk
  • butter
  • eggs
  • allulose
  • saffron mixture
  • Form Dough
  • Gradually stir the wet ingredients into the dry.
  • Mix until smooth.
  • Allow dough to rest 10 minutes so the psyllium hydrates.
  • Shape
  • Divide into 12 equal portions.
  • Roll each into an 8-inch rope.
  • Curl both ends inward to create the traditional S-shape.
  • Press one raisin into each curl.
  • Rise
  • Cover loosely.
  • Rise 45–60 minutes until slightly puffy.
  • Bake
  • Brush with beaten egg.
  • Bake at:
  • 350°F (177°C)
  • Moisture Bake Recommended: Place a pan of hot water on the lower oven rack.
  • Bake 18–22 minutes until lightly golden.
  • Internal temperature:
  • 195–200°F
  • Cool
  • Cool 15 minutes before serving.
  • Excellent served warm with butter.
