Ingredient Functionality
Saffron provides the traditional golden color and distinctive floral aroma.
Almond flour contributes richness and tenderness while being naturally lower in carbohydrates than wheat flour.
Bamboo flour helps create a lighter crumb and supports structure.
Whey protein isolate improves protein content and contributes to browning.
Psyllium husk and xanthan gum help mimic gluten by improving elasticity and moisture retention.
Allulose provides sweetness and promotes browning with less crystallization than many alternative sweeteners.
For your Golden Dolci cookbook, these pair beautifully with a whipped cinnamon butter or a lightly sweetened vanilla cream cheese spread for a traditional Scandinavian holiday breakfast.
