Ingredients

  • lbs seedless red grapes
  • 1 tbsp honey
  • 1 tbsp melted butter
  • 1 tsp olive oil
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1 tsp fresh thyme leaves optional

Instructions

  • Prepare the Oven
  • Preheat oven to 400°F (204°C).
  • Line a rimmed baking sheet or baking dish with parchment paper.
  • Make the Glaze
  • In a small bowl, whisk together the honey, melted butter, olive oil, vanilla, cinnamon, nutmeg, and sea salt.
  • Coat the Grapes
  • Place the grapes in a large bowl.
  • Pour the glaze over the grapes and toss gently until evenly coated.
  • Spread into a single layer on the prepared baking sheet.
  • Sprinkle with fresh thyme if using.
  • Roast
  • Bake for 20–25 minutes, stirring once halfway through, until the grapes are softened, lightly blistered, and beginning to caramelize.
  • Serve
  • Allow to cool for 5 minutes before serving.
  • Spoon any pan juices over the grapes.
