Irish Stew

A warm and hearty traditional Irish dish made with tender lamb, potatoes, onions, carrots, and simple herbs. Everything is slowly simmered together until the meat is tender and the broth becomes rich and comforting, making it perfect for a cold or cozy day.

Ingredients

  • 2 pounds lamb shoulder or stew meat cut into chunks
  • 2 tablespoons butter or oil
  • 1 large onion chopped
  • 3 carrots sliced
  • 2 pounds potatoes peeled and cut into chunks
  • 4 cups beef or lamb broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley optional

Instructions

  • Heat the butter or oil in a large pot over medium-high heat.
  • Add the lamb and brown it lightly on all sides.
  • Add the onion and cook for about 4–5 minutes.
  • Pour in the broth and add the thyme, parsley, bay leaf, salt, and pepper.
  • Bring to a gentle boil, then reduce the heat. Cover and simmer for about 1 hour.
  • Add the carrots and potatoes.
  • Cover and simmer another 35–45 minutes, until the lamb and potatoes are very tender.
  • Remove the bay leaf and taste for seasoning.
  • Sprinkle with fresh parsley before serving.
