Ingredients
2poundslamb shoulder or stew meatcut into chunks
2tablespoonsbutter or oil
1large onionchopped
3carrotssliced
2poundspotatoespeeled and cut into chunks
4cupsbeef or lamb broth
1teaspoondried thyme
1teaspoondried parsley
1bay leaf
1teaspoonsaltor to taste
1/2teaspoonblack pepper
2tablespoonschopped fresh parsleyoptional
Instructions
Heat the butter or oil in a large pot over medium-high heat.
Add the lamb and brown it lightly on all sides.
Add the onion and cook for about 4–5 minutes.
Pour in the broth and add the thyme, parsley, bay leaf, salt, and pepper.
Bring to a gentle boil, then reduce the heat. Cover and simmer for about 1 hour.
Add the carrots and potatoes.
Cover and simmer another 35–45 minutes, until the lamb and potatoes are very tender.
Remove the bay leaf and taste for seasoning.
Sprinkle with fresh parsley before serving.
