Ingredients

  • 1/2 Cup almond butter no sugar added
  • 2 tbsp cocoa powder unsweetened
  • 1/4 Cup powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 tbsp melted coconut oil or butter for extra richness
  • 1/4 Cup crushed almonds for rolling
  • Espresso(s) for Serving

Instructions

  • In a bowl, mix almond butter, cocoa powder, sweetener, vanilla, salt, and melted coconut oil until smooth.
  • Roll into small balls (~1 inch each).
  • Roll truffles in crushed almonds for texture.
  • Chill in the fridge for 30 minutes before serving.
