Strawberry Arugula Salad with Honeyed Pecans & Goat Cheese
Ingredients
For the Salad:
- 3 cups fresh arugula
- 4 large strawberries, sliced
- 1/3 cup crumbled goat cheese
- 1/4 Cup pecans toasted
- 1 tbsp fresh basil, finely chopped optional, for extra flavor
For the Honeyed Pecans:
- ¼ cup pecans
- 1 tbsp butter
- 1 tsp honey or honey alternative (like Wholesome Yum keto honey or Lakanto syrup
- ¼ tsp cinnamon optional
- Pinch of sea salt
For the Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar or balsamic vinegar low-carb version
- 1 tsp Dijon mustard
- ½ tsp monk fruit or erythritol sweetener optional
- Salt & black pepper to taste
Instructions
Prepare the Honeyed Pecans
- Heat a small skillet over medium heat.
- Add butter and let it melt, then stir in pecans, sugar-free honey, cinnamon, and salt.
- Stir continuously for 2-3 minutes until pecans are glossy and fragrant. Remove from heat and let cool on parchment paper.
Make the Dressing
- In a small bowl, whisk together olive oil, vinegar, Dijon mustard, and sweetener until smooth.
- Season with salt and pepper to taste.
Assemble the Salad
- In a large bowl, toss together arugula, sliced strawberries, crumbled goat cheese, and honeyed pecans.
- Drizzle with dressing and gently toss to combine.
