Ingredients

  • 8 large butter lettuce or romaine leaves
  • 8 slices roasted turkey breast nitrate-free, if possible
  • 1 avocado, sliced
  • 1/2 cup shredded carrots
  • 1/2 cucumber, julienned or thinly sliced
  • 1/4 cup red bell pepper, thinly sliced
  • 2 Optional: tbsp hummus or Dijon mustard for spread
  • Optional garnish: fresh parsley, sprouts, or sesame seeds
  • Sea salt and black pepper to taste

Instructions

  • Prepare lettuce: Rinse and pat dry the lettuce leaves. Choose the largest, most intact ones for easy wrapping.
  • Layer ingredients: On each leaf, spread a small amount of hummus or mustard (optional), then layer a slice of turkey, a few slices of avocado, and a small handful of veggies.
  • Wrap and secure: Fold in the sides of the lettuce slightly, then roll like a mini burrito. Secure with a toothpick if desired.
  • Serve fresh: Arrange on a platter and garnish with herbs or sesame seeds. Best served immediately.
