1. Preheat the oven to 400°F (200°C).

2. In a bowl, mix all dry ingredients together except the gelatin, erythritol, brown sugar replacement, sliced almonds (optional), and white chocolate chips.

3. Bloom the gelatin with the cold water then heat in the microwave until the gelatin is a liquidy consistency

4. Heat the coconut oil in the microwave until it’s melted (usually about 1 minute).

5. Stir the gelatin mixture and add the brown sugar replacement, erythritol, vanilla & almond extracts.

6. Put the sour cream, eggs, gelatin mixture, and melted coconut oil in with the dry ingredients.

7. Mix all of the ingredients well and add the white chocolate chips and the sliced almonds (optional).

8. Line a cookie sheet with parchment paper and drop the cookies on the pan with a cookie scoop.

9. Bake for about 10 - 15 minutes.
