- Whisk protein powder and salt together in a large mixing bowl for a few seconds.
- Bloom the gelatin in the cold water for a few minutes, then add the butter; heat in microwave until melted.
- Stir the brown sugar replacement into the melted gelatin mixture and stir until dissolved.
- Pour coconut milk and gelatin mixture. Stir until all ingredients are evenly mixed and a thick “dough” has formed. Shave chocolate or add chocolate chips as desired.
- Scoop into small bite-size balls (may be able to use a cookie dropper for this) and place on parchment paper or a plate.
