  1. Whisk protein powder and salt together in a large mixing bowl for a few seconds.
  2. Bloom the gelatin in the cold water for a few minutes, then add the butter; heat in microwave until melted.
  3. Stir the brown sugar replacement into the melted gelatin mixture and stir until dissolved.
  4. Pour coconut milk and gelatin mixture. Stir until all ingredients are evenly mixed and a thick “dough” has formed. Shave chocolate or add chocolate chips as desired.
  5. Scoop into small bite-size balls (may be able to use a cookie dropper for this) and place on parchment paper or a plate.
