- Preheat oven to 350 F.
- Combine almond flour, protein powder, salt, coconut flour, coconut flakes, baking soda, xanthan gum, acacia gum, guar gum, cream of tartar, and allulose in a large mixing bowl. Stir until everything is evenly mixed and set aside.
- In a separate bowl, whisk together the gelatin with the cold water. Allow to bloom for a few minutes, then add the butter, vanilla extract, and brown sugar replacement.
- Heat gelatin mixture in the microwave until butter is melted (usually about 2 minutes).
- Pour heated gelatin mixture into the dry ingredients and stir until mixture is consistent throughout.
- Flatten dough into a 9" x 13" pan or form and flatten into cookies.
- Bake at 350 F. for about 15-20 minutes or until golden brown on top.
