Chewy Keto White Chip Chocolate Cookies

- 1. Preheat the oven to 400°F (200°C).
- 2. In a bowl, mix all dry ingredients together except the gelatin, erythritol, brown sugar replacement, sliced almonds (optional), and white chocolate chips.
- 3. Bloom the gelatin with the cold water then heat in the microwave until the gelatin is a liquidy consistency
- 4. Heat the coconut oil in the microwave until it’s melted (usually about 1 minute).
- 5. Stir the gelatin mixture and add the brown sugar replacement, erythritol, vanilla & almond extracts.
- 6. Put the sour cream, eggs, gelatin mixture, and melted coconut oil in with the dry ingredients.
- 7. Mix all of the ingredients well and add the white chocolate chips and the sliced almonds (optional).
- 8. Line a cookie sheet with parchment paper and drop the cookies on the pan with a cookie scoop.
- 9. Bake for about 10 - 15 minutes.
Makes about 36 cookies.
