Ingredients

For the Marinade:

  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 2 cloves garlic, minced
  • 1 tbsp fresh chopped rosemary or thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper

For the Skewers:

  • 1 lbs 1.5 boneless, skinless chicken breast, cut into 1.5-inch cubes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small zucchini, sliced
  • 1 small red onion, quartered
  • Optional: cherry tomatoes or mushrooms
  • 8 Bamboo or metal skewers if bamboo, soak 30 mins

Instructions

  • Marinate the chicken: In a bowl or zip-top bag, combine all marinade ingredients. Add chicken and toss to coat. Marinate in the fridge for 30–60 minutes.
  • Prepare vegetables and skewers: Chop veggies into similar-sized pieces. Alternate threading chicken and veggies onto skewers.
  • Grill: Preheat grill or grill pan to medium-high. Lightly oil grates. Grill skewers 5–7 minutes per side, until chicken is fully cooked and has grill marks.
  • Serve hot: Garnish with extra lemon zest or fresh herbs. Serve with quinoa salad, leafy greens, or roasted sweet potatoes.
