Apple Coffee Cake
Ingredients
Cake
- 1½ cups all-purpose flour or almond flour for GF
- ¾ tsp baking soda
- ½ tsp cream of tartar
- ½ tsp salt
- 1½ tsp ground cinnamon
- ½ tsp nutmeg
- ½ cup unsalted butter softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream or Greek yogurt
- 2 medium apples peeled and chopped
Streusel
- ½ cup all-purpose flour
- ½ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp salt
- 4 tbsp cold butter cubed
Instructions
Streusel
- In a bowl, mix flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly. Chill while making the batter.
Cake
- Prep the Bundt Pan
- Grease your fancy shmancy bundt pan thoroughly with softened butter and dust with flour (or almond flour). Tap out the excess.
- Whisk the Dry Ingredients
- In a separate bowl, combine flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg.
- Mix the Wet
- Cream butter and both sugars until light and fluffy. Beat in eggs one at a time, then vanilla. Add sour cream and mix until smooth.
- Combine
- Add dry ingredients gradually, mixing until just combined. Fold in chopped apples.
- Layer It Up
- Spoon half the batter into the bundt pan, sprinkle half the streusel, then the rest of the batter, then the remaining streusel on top.
- Bake
- Bake at 350°F for 55–60 minutes, until a toothpick comes out clean.
- Cool 15 minutes in the pan before flipping onto a rack.
