- 1 cup unsweetened coconut milk
- 1/2 cup wild blueberries fresh or frozen
- 1 scoop collagen peptides unflavored or vanilla
- 1 tbsp MCT oil optional, for creaminess
- 1 tbsp 1–2 powdered erythritol or preferred sweetener, to taste
- 1 tsp finely grated lemon zest
In a blender, combine the coconut milk, blueberries, collagen peptides, MCT oil (if using), erythritol, and lemon zest.
Blend until smooth and creamy.
Pour the mixture evenly into popsicle molds.
Insert sticks and freeze at least 6 hours or overnight until firm.
To serve, run the mold briefly under warm water to release the popsicles.
