Ingredients

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder grain-free if Paleo strict
  • 1/4 tsp sea salt
  • 2 eggs, room temperature
  • 1/4 cup unsweetened almond milk or coconut milk
  • 2 tbsp melted ghee or coconut oil
  • 1 tsp apple cider vinegar optional, helps lift and fluff

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix dry ingredients in one bowl (almond flour, coconut flour, baking powder, sea salt).
  • Whisk wet ingredients in another bowl (eggs, milk, ghee/coconut oil, optional vinegar).
  • Combine wet and dry ingredients. Let sit for 2–3 minutes so the coconut flour can absorb moisture.
  • Form into biscuits using a scoop or hands. Place on baking sheet and slightly flatten tops.
  • Bake for 18–20 minutes or until golden around the edges and cooked through.
  • Cool slightly and serve with coconut whipped cream, honey, or herb butter.
