Garlic Herb Chicken & Rice Bake

Ingredients

  • 2-3 cups shredded rotisserie chicken
  • 2 cups frozen mixed vegetables peas, carrots, green beans
  • 1/2 onion diced
  • 2 cloves garlic 1 tsp garlic powder
  • 1 cup cooked rice white, brown, or wild
  • 1/4 cup olive oil or melted butter
  • Juice of 1/2 lemon
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • Optional: crumbled feta or shredded mozzarella

Instructions

  • Preheat oven to 375°F (190°C).
  • Sauté diced onion in olive oil or butter until softened (skip the garlic here since we’re using powder).
  • In a large bowl, combine chicken, frozen vegetables, cooked rice, garlic powder, sautéed onion, oregano, thyme, lemon juice, salt, and pepper.
  • Mix everything well and transfer to a greased baking dish.
  • Top with crumbled feta or mozzarella if desired.
  • Bake for 25–30 minutes, until hot throughout and lightly golden on top.
