Garlic Herb Chicken & Rice Bake
Ingredients
- 2-3 cups shredded rotisserie chicken
- 2 cups frozen mixed vegetables peas, carrots, green beans
- 1/2 onion diced
- 2 cloves garlic 1 tsp garlic powder
- 1 cup cooked rice white, brown, or wild
- 1/4 cup olive oil or melted butter
- Juice of 1/2 lemon
- 1 tsp dried oregano
- 1/2 tsp thyme
- Salt and pepper to taste
- Optional: crumbled feta or shredded mozzarella
Instructions
- Preheat oven to 375°F (190°C).
- Sauté diced onion in olive oil or butter until softened (skip the garlic here since we’re using powder).
- In a large bowl, combine chicken, frozen vegetables, cooked rice, garlic powder, sautéed onion, oregano, thyme, lemon juice, salt, and pepper.
- Mix everything well and transfer to a greased baking dish.
- Top with crumbled feta or mozzarella if desired.
- Bake for 25–30 minutes, until hot throughout and lightly golden on top.
