Gluten Free Oatmeal Pancakes
Delight in these gluten-free oatmeal pancakes, made with hearty oats and a hint of natural sweetness. Perfectly golden on the outside and tender on the inside, they make a warm, satisfying start to your day.
- 1.5 Cups Oat flour (grinding oats in a blender works very well
- 2 Tbsp Sugar or sugar alternative
- 1 Tbsp Baking Powder
- 1/2 tsp salt
- 1.25 Cup Milk or dairy alternative
- 1 Large egg
- 4 Tbsp butter plus more for greasing the skillet
- 1 tsp vanilla extract
Place ~ 1.5 Cups rolled oats in a blender. Blend the oats until they resemble a flour.
Whisk together the oat flour, sugar, baking powder, and salt.
Heat butter in the microwave until melted.
Add milk, melted butter, egg, & vanilla extract to the dry ingredients.
Stir batter until everything is evenly mixed.
Cook Pancakes
Heat a skillet and brush with butter.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes until golden brown.
