Ingredients

  • 1.5 Cups Oat flour (grinding oats in a blender works very well
  • 2 Tbsp Sugar or sugar alternative
  • 1 Tbsp Baking Powder
  • 1/2 tsp salt
  • 1.25 Cup Milk or dairy alternative
  • 1 Large egg
  • 4 Tbsp butter plus more for greasing the skillet
  • 1 tsp vanilla extract

Instructions

  • Place ~ 1.5 Cups rolled oats in a blender. Blend the oats until they resemble a flour.
  • Whisk together the oat flour, sugar, baking powder, and salt.
  • Heat butter in the microwave until melted.
  • Add milk, melted butter, egg, & vanilla extract to the dry ingredients.
  • Stir batter until everything is evenly mixed.

Cook Pancakes

  • Heat a skillet and brush with butter.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes until golden brown.

Serve

  • Serve warm with your favorite toppings like fresh fruit or maple syrup.
