Ingredients
For the Marinade:
1/4cupolive oil
3tbspfresh lemon juice
2tsplemon zest
2clovesgarlic, minced
1tbspfresh chopped rosemary or thyme
1tspsea salt
1/2tspblack pepper
For the Skewers:
1lbs1.5 boneless, skinless chicken breast, cut into 1.5-inch cubes
1redbell pepper, chopped
1yellowbell pepper, chopped
1smallzucchini, sliced
1smallred onion, quartered
Optional: cherry tomatoes or mushrooms
8Bamboo or metal skewersif bamboo, soak 30 mins
Instructions
Marinate the chicken: In a bowl or zip-top bag, combine all marinade ingredients. Add chicken and toss to coat. Marinate in the fridge for 30–60 minutes.
Prepare vegetables and skewers: Chop veggies into similar-sized pieces. Alternate threading chicken and veggies onto skewers.
Grill: Preheat grill or grill pan to medium-high. Lightly oil grates. Grill skewers 5–7 minutes per side, until chicken is fully cooked and has grill marks.
