Keto Avocado Bruschetta with Cherry Tomatoes & Balsamic Glaze

For the Bruschetta Topping
- 1 ripe avocado diced
- 1/2 Cup cherry tomatoes diced
- 1 tbsp extra virgin olive oil
- 1 tsp fresh lemon juice
- 1 tbsp fresh basil, finely chopped
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes optional for heat
For the Balsamic Glaze
- 1/4 Cup balsamic vinegar check for low-carb options
- 1/2 tsp monk fruit or erythritol sweetener or other sweetener
Instructions
- Prepare the Keto & Gluten Free Crackers as Directed Recipe & Instructions Here
- In a small saucepan over medium heat, add balsamic vinegar and sweetener.
- Simmer for 5-7 minutes, stirring occasionally, until thickened.
- Remove from heat and let cool.
- In a bowl, gently mix avocado, cherry tomatoes, olive oil, lemon juice, basil, salt, pepper, and red pepper flakes.
- Stir lightly to keep the avocado chunks intact.
- Spoon the avocado bruschetta mixture onto the keto crackers, chaffle slices, or cheese rounds.
- Drizzle with the keto balsamic glaze.
- Garnish with extra fresh basil and cracked black pepper.
