For the Bruschetta Topping

  • 1 ripe avocado diced
  • 1/2 Cup cherry tomatoes diced
  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 tbsp fresh basil, finely chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional for heat

For the Balsamic Glaze

  • 1/4 Cup balsamic vinegar check for low-carb options
  • 1/2 tsp monk fruit or erythritol sweetener or other sweetener

Instructions

  • In a small saucepan over medium heat, add balsamic vinegar and sweetener.
  • Simmer for 5-7 minutes, stirring occasionally, until thickened.
  • Remove from heat and let cool.
  • In a bowl, gently mix avocado, cherry tomatoes, olive oil, lemon juice, basil, salt, pepper, and red pepper flakes.
  • Stir lightly to keep the avocado chunks intact.
