Strawberry Rhubarb Sparkling Shrub
This shrub is made with apple cider vinegar, strawberries and rhubarb, as a perfect fizzy alternative to soda.
Prep Time 20 minutes minutes
- ½ cup chopped rhubarb
- ½ cup strawberries fresh or frozen
- 2 tbsp apple cider vinegar
- 2 tbsp erythritol or preferred sweetener
- Sparkling water to top
In a small saucepan, simmer rhubarb, strawberries, erythritol, and 2 tbsp water until the fruit softens (about 5–7 minutes).
Allow mixture to cool, then stir in apple cider vinegar.
Strain to remove pulp, reserving the liquid.
To serve, pour shrub concentrate into a glass with ice, then top with sparkling water.
Garnish with strawberry slices or a rhubarb ribbon, if desired.
