Ingredients

  • 1 cup warm milk or unsweetened almond milk
  • 2 1/4 tsp active dry yeast 1 packet
  • 2 tbsp honey or maple syrup
  • 1 egg
  • 2 tbsp melted butter or coconut oil
  • 1 1/2 cups whole wheat flour
  • 1 1/4 cups all-purpose flour or gluten-free blend, if needed
  • 1 tsp sea salt

For the Whipped Honey Butter:

  • 1/2 cup unsalted butter, softened
  • 2 tbsp raw honey
  • Pinch of sea salt
  • 1/4 Optional: tsp cinnamon for a cozy twist

Instructions

  • Preheat oven to 375°F. and Line a baking sheet with parchment paper.
  • Activate yeast: In a large bowl, mix warm milk, honey, and yeast. Let sit 5–10 minutes until foamy.
  • Mix dough: Stir in egg, butter, salt, and whole wheat flour. Gradually add all-purpose flour until a soft dough forms. Knead for 5–7 minutes until smooth and elastic.
  • First rise: Cover and let dough rise in a warm spot for about 1 hour or until doubled.
  • Shape and bake: Divide into 12 balls, place on a parchment-lined baking sheet or in a greased dish. Bake at 375°F for 18–20 minutes until golden brown.
  • Whip the butter: Using a mixer or whisk, beat softened butter, honey, and a pinch of salt until fluffy.
  • Serve warm: Spread rolls with honey butter and serve immediately or store covered and warm just before serving.
