Coconut Water Strawberry Granita
Ingredients
- 3 cups coconut water
- 1 ½ cups fresh strawberries hulled
- 3 –4 tbsp allulose or maple syrup adjust to taste
- 1 tbsp fresh lime juice
- ½ tsp lime zest
- Pinch sea salt
- Optional garnish:
- fresh mint leaves
- sliced strawberries
- edible flowers
Instructions
- Blend the Base
- In a blender combine:
- coconut water
- strawberries
- sweetener
- lime juice
- lime zest
- pinch of salt
- Blend until smooth.
- Strain (Optional)
- For a smoother texture, strain the mixture through a fine mesh sieve to remove seeds.
- Freeze
- Pour mixture into a shallow baking dish.
- Place in the freezer.
- Scrape Crystals
- After 45 minutes, scrape the mixture with a fork to break up the ice.
- Repeat every 30–40 minutes for about 3 hours until fluffy ice crystals form.
- Serve
- Spoon granita into chilled glasses or bowls.
- Garnish with:
- fresh mint
- strawberry slices
- edible flowers for a spring presentation.
