In a large bowl mix together cocoa powder, stevia, salt, coconut milk powder, & powdered erythritol. Set aside.
In a separate bowl melt 1/2 Cup coconut oil. Add vanilla extract to this bowl.
Pour melted Coconut oil into the prepared dry ingredients.
Whisk thoroughly until all ingredients are well blended. If a thinner consistency is needed, add more melted coconut oil 1 Tbsp at a time until the desired consistency is reached.
Mix in coconut, dried fruit, nuts, etc. if desired.
Spoon or pour chocolate into molds. Allow to set for a few minutes*, then place in refrigerator or freezer until solidified.
*Optionally, garnish with your favorite toppings before placing in the refrigerator / freezer.
