Dragon Fruit Lime Coconut Sorbet
Ingredients
- 3 cups fresh dragon fruit diced
- 1 cup coconut water
- ¼ cup coconut cream
- 3 tbsp allulose or honey adjust to taste
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- pinch sea salt
- Garnish
- fresh raspberries
- edible flowers
- mint leaves
- lime zest curls
Instructions
Blend the Base:
- In a blender combine dragon fruit, coconut water, coconut cream, sweetener, lime juice, lime zest, & pinch of salt.
- Blend until completely smooth.
Chill the Mixture:
- Refrigerate the mixture 30 minutes to enhance flavor and improve freezing texture.
Freeze:
- Ice Cream Maker Method: Pour mixture into an ice cream maker and churn according to manufacturer instructions until smooth and frozen.
- No Machine Method: Pour mixture into a shallow pan and freeze. Stir with a fork every 30–40 minutes for about 3 hours until a soft sorbet texture forms.
Serve:
- Scoop sorbet into chilled bowls.
- Garnish with raspberries, edible flowers, & mint leaves.
