Espresso with Keto Almond Truffles
Ingredients
- 1/2 Cup almond butter no sugar added
- 2 tbsp cocoa powder unsweetened
- 1/4 Cup powdered erythritol or monk fruit sweetener
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 2 tbsp melted coconut oil or butter for extra richness
- 1/4 Cup crushed almonds for rolling
- Espresso(s) for Serving
Instructions
- In a bowl, mix almond butter, cocoa powder, sweetener, vanilla, salt, and melted coconut oil until smooth.
- Roll into small balls (~1 inch each).
- Roll truffles in crushed almonds for texture.
- Chill in the fridge for 30 minutes before serving.
