Ingredients

  • *all spices can be simply substituted with 1 TBSP bruschetta seasoning
  • Tomato paste no sugar added 6 oz (170 g) For concentrated tomato flavor
  • Water ¾ cup 180 g Adjust for consistency
  • Olive oil or avocado oil 1 tbsp 14 g Adds richness & emulsification
  • Apple cider vinegar 1 tsp 5 g For acidity balance
  • Swerve® Confectioners or dash stevia
  • Onion powder ½ tsp 1.2 g Classic flavor
  • Garlic powder ½ tsp 1.5 g Depth & warmth
  • Dried oregano 1 tsp 1 g Essential herb
  • Dried basil ½ tsp 0.5 g Sweet, fragrant balance
  • Sea salt ½ tsp 2.5 g Adjust to taste
  • Xanthan gum optional ⅛ tsp (0.25 g) For body & freezer stability

Instructions

  • Hydrate Tomato Base
  • In a saucepan, whisk together tomato paste and water until smooth over low-medium heat.
  • Emulsify & Season
  • Stir in oil, vinegar, sweetener, and all spices/herbs. Simmer gently for 10 minutes.
  • Thicken (Optional)
  • If using xanthan gum, sprinkle it in very gradually, whisking constantly to avoid clumps. Simmer an additional 5–10 minutes until smooth and slightly thickened.
  • Cool & Portion
  • Let sauce cool. Portion into airtight containers or silicone trays for freezing.
  • Use or Freeze
  • Store in the fridge up to 7 days or freeze for up to 3 months. Thaw overnight before using.
