Passion Fruit Coconut Cloud Mousse
Ingredients
Passion Fruit Base:
- ¾ cup passion fruit pulp fresh or frozen
- ¼ cup allulose or honey* adjust to taste
- 1 tbsp lime juice
- 1 tsp vanilla extract
Coconut Cream Layer:
- 1 cup coconut cream
- ½ cup Greek yogurt or coconut yogurt**
- 1 tbsp allulose or honey
- Stabilizer
- 1 packet unflavored gelatin 7 g
- 3 tbsp cold water for blooming gelatin
Garnish:
- fresh raspberries
- sliced strawberries
- edible flowers
- mint leaves
- toasted coconut flakes
Instructions
Bloom Gelatin:
- Place 3 tbsp cold water in a small bowl.
- Sprinkle gelatin evenly over the water and allow it to bloom 5 minutes.
Prepare Passion Fruit Base:
- In a saucepan combine:-Passion Fruit Pulp-SweetenerLime Juice
- Warm gently over medium-low heat until just steaming.
- Add the bloomed gelatin and stir until fully dissolved.
- Allow mixture to cool slightly.
Prepare Coconut Cream:
- In a mixing bowl whisk together coconut cream, yogurt, & sweetener.
- Whip lightly until smooth and fluffy.
- Combine Mousse
- Fold the cooled passion fruit mixture into the coconut cream.
- Stir gently until evenly combined and airy.
Chill
- Spoon mousse into dessert glasses or molds.
- Refrigerate about 2 hours until set.
Garnish
- Before serving decorate with: -Raspberries-Strawberries-Edible Flowers-Mint Leaves-Toasted Coconut
- The bright fruit and flowers create a vibrant spring garden presentation!
